Eulo wasn’t spared—the Paroo River peaked at 6.5 meters, inundating homes and cutting power. 'You move to the outback and [flooding] is probably the last thing you expect,' Adam admitted. Thankfully, the pub was spared, and since the waters receded, a steady stream of tourists and locals has kept them on their toes.

'Coming from Tasmania, this is like moving to New York,' Adam joked. Despite their engineering backgrounds, both Adam and Prue are self-proclaimed people persons. 'Everybody has a story,' Adam said, whether it’s grey nomads, locals, or travelers. Prue agreed, adding, 'It’s been fascinating to hear about the lives people have lived and the places they’ve been.' One couple, for instance, had been on the move for 22 years, sometimes deciding their route based on taking only right-hand turns at intersections. 'They see places they wouldn’t otherwise, and we benefit from their stories,' she said.

The transition hasn’t been without challenges. Adam admitted to a steep learning curve, from logistics like keeping supplies cold in the outback to running a pub with no prior experience. 'Luckily, Prue’s here, and we’ve worked together for years—we’re a pretty good team,' he said. Prue, meanwhile, is learning to pace herself as they face their first outback summer. 'You need to keep going, but not everything needs to be done at once,' she advised. 'When people offer help, take it—it builds a stronger community.'

One of their most memorable moments came when the community and tourists united for a combined schools strings concert at the pub. 'We fed them because we didn’t want hangry musicians,' Adam laughed. 'The place filled up—locals, parents, kids, even people from the van park. It was a brilliant night.'

Despite the floods, the pub needed significant work. 'It had been neglected for years,' Prue said. 'We saw its potential, but it required time and money to meet our standards. We’re still working on it.' Yet, for them, building something special is part of the appeal. 'We’ve always tried to leave things better than we found them,' Prue explained. It’s also a way to show the Eulo community they’re committed for the long haul. 'We’re willing to invest our time and money to give them the pub they deserve,' she added.
